Super Food: Eggs

Ahhh, eggs...the perfect amino. Baked, boiled, scrambled, poached, fried, beaten, fluffed or folded, there are so many inventive choices for this complete super food! In my first trimester of pregnancy, I was going through a mega egg craving, so it was good to have a variety of options to liven my craving up. Eggs are high in vitamin B12, protein, riboflavin, choline, phosphorus, and selenium. A good source of vitamin B6, folate, pantothenic acid, and iron. The saying should be,"An egg a day keeps the doctor away!" 

With all the different labels of eggs that are stacked on our grocery store shelves, it can be hard to decipher which source is the best for your nutrition intake. Organic eggs are laid by free-range chickens that eat organically grown feed only that is free from animal byproducts and genetically modified organism (GMOs). Unlike caged or free-range chickens that both may be given antibiotics, organic egg-laying chickens will only be given antibiotics in absolute emergencies. 

In a 2009 review article published in the Nutrition Reviews journal, the Institute of Medicine added choline to the list of recommended nutrients due to its health benefits. The authors noted that eggs are one of the best sources of choline, which has numerous roles in human metabolism. Choline may help prevent atherosclerosis, neurological disorders, and liver disease.
