When it comes to eggs, this is one of my favourite ways to jazz them up! I often make this style of eggs over the weekend or when I'm having an egg craving. It's quick, easy, tasty, and fills you up substantially without making you bloated. Another plus! This is a 'soul food' recipe, so I don't really have any specific measurements for the ingredients involved- I just go by feel- and you should too. :-)
Ingredients
(For One)
2 x Organic Eggs
Milk
Soya Sauce
Butter
Oregano (freshly chopped or dried)
1/2 Truss or Roman Tomato (diced)
Grated Cheddar (Tasty) Cheese
Salt
Pepper
Bread of choice to serve on (optional)
Pesto (for bread)
Method
1. Heat pan with a little butter.
2. Whilst the pan is heating up, crack the two eggs into a mixing glass or bowel.
3. Add milk, soya sauce, oregano, salt and pepper. Beat together.
4. Once pan is hot, pour the scramble egg mixture into it. Shortly after, add diced tomato and cheese. Gently fold cheese and tomato in through the scramble egg mixture.
5. As soon as eggs have been cooked to desired consistency, remove pan from heat.
6. If serving on bread, toast a slice and spread the pesto on it. Serve eggs on top of the pesto toast. Enjoy!
